A non-scale victory

I was inspired by Anna at Losing my puppy (and others who have recently posted comments) to try something new.

I've been struggling with vegetables my entire life. I try to eat them and it just doesn't work. It's probably mental, but I just CAN NOT put them in my mouth.

I have made egg muffins a million times. But it's always been super simple, only adding sausage or bacon and cheese.  Today I decided to try to sneak those dreaded veggies in.

I just went with what I had. Which was a mixed bag of ??? in the freezer that I mix into my sugar gliders meals. I've already thrown the bag away, but I think it's shredded carrots, beats, cabbage, I'm not sure if it's spinach or kale, some sweet potatoes,  maybe green beans (not sure on what that was, but it looked like a bean lol).

Even though it's chopped already, I'm trying to trick myself into eating it so I chopped it up into even smaller pieces.

I mixed it in my eggs along with a little salt, pepper, garlic and onion powder.

I topped it with a little cheese. I love cheese and thought it might help hide the "green stuff".

Baked it at 350 degrees for about 12 minutes and......ta da!

Not the best looking muffin, but it tasted really good. And I didn't even notice the veggies!

I put the ingredients into a recipe calculator and here are the nutrition facts it gave:

Total fat: 6g
Sodium: 211 mg
Potassium: 81mg
Total carbs: 1.4g
Sugars: 0.4g
Protein: 6.9g

A total non-scale victory for me!

  2. That's awesome. I am so glad you found a way to incorporate a few more veggies into your day. And I love that you used what you had on hand :)
